I am Kim Nam-guk, the owner of Bambachi Farm and the maker of Kachidolbaeju. Kachidolbaeju is a premium traditional liquor crafted from organic native wild pears, directly cultivated at Bambachi Farm in Hongcheon, Gangwon-do. Grown in Bambachi's clean air and natural environment, these wild pears are steeped and aged using traditional methods, enhancing their unique refreshing acidity and deep fruit aroma. This liquor, perfected by time and nature without artificial flavors, features a clean finish and balanced rich flavor, making it a fitting choice for cherished occasions and gifts.

Though not widely known today, wild pears are native Korean pears that thrive in harsh natural environments, unlike commonly cultivated pears. While eating them raw can feel very sour and astringent, this isn't due to low sugar content but rather a high sugar and acidity combination, where the sourness is more prominent.

Since childhood, wild pear liquor has been considered a precious drink in the Yeongdong region. Born in Gangneung, Gangwon-do, I naturally grew up hearing stories of wild pear liquor. As an adult, I rediscovered its charm after finishing a jar of wild pear liquor I encountered by chance.

Historically, wild pears have been known for various health benefits, and their components are particularly well extracted when steeped and aged with alcohol. (This was confirmed during the process of preparing a patent related to the treatment and prevention of colitis.) Called 'medicinal pears' due to their efficacy being 4 to 6 times greater than regular pears, records of wild pears can be found in ancient texts such as 'Donguibogam' and 'Bonchogangmok.'

I started making this liquor with the desire to restore and widely promote this disappearing wild pear liquor using traditional methods. While I cannot recommend alcohol for health, I firmly believe that if one chooses to drink, they should select a liquor honestly made with healthy ingredients.

Therefore, artificial additives are completely excluded, and the liquor is brewed using over 40% organic wild pears. This commitment entails significant cost burdens and challenges like sediment, which could be easily resolved with chemicals. However, I always produce with the mindset that my family will drink it, and if I can drink it myself, I can confidently recommend it to guests.

The farm is also managed with the same philosophy. I manually tidy up every day, ensuring no cigarette butts or plastic scraps are left, use eco-friendly fertilizers that are over 10 times more expensive than conventional ones, and pursue coexistence with nature without herbicides or pesticides. As a result, the farm maintains its organic and pesticide-free certifications.

Kachidolbaeju 16.5 is a premium traditional liquor brewed from organically cultivated native wild pears from Gangwon-do, using traditional steeping and aging methods. It is made without any artificial additives like sugar and contains over 40% wild pear. The subtle wild pear aroma harmonizes with a smooth, savory taste. With an optimal alcohol content of 16.5%, it offers a clean finish and natural flavor, enhancing any meal or special occasion. Its elegant design and rich flavor also make it a perfect gift.



Q. Was there anything special that happened while making Kachidolbaeju?

9cc49b817dd76.pngApproximately 40,000 pyeong of wild pear trees were planted in the Gangneung Gyeongpodae area, which was declared a disaster zone due to a fire in April 2023. This area was also selected as the nation's best afforestation site in 2025. We are currently developing a wild pear tree business complex in collaboration with the Gangneung Volunteer Center to cultivate primary, secondary, and tertiary industries through the flowers and fruits produced by these trees, thereby providing employment opportunities for fire victims, youth, and seniors in the region.

Wild pears, also known as 'medicinal pears,' are believed to have 4-6 times the efficacy of regular pears. They contain components that aid in meat tenderization, making them an excellent pairing with meat dishes. Additionally, they are rich in compounds that support digestion and help prevent constipation.

With a refreshing taste that cuts through rich or fishy flavors and stimulates the appetite, Kachidolbaeju pairs well as an aperitif, with raw fish (hoe), or meat. True to its long history in Korea, it harmonizes beautifully with all Korean cuisine.
